2 pounds of turtle beans, Mexican type

2 whole onions, chopped
1 Teaspoon ground cumin
1 Teaspoon fennel seeds
1/2 Teaspoon salt
½ Teaspoon pepper
2 Cups chicken stock or enough to cover ingredients
Soak the turtle beans in cold water overnight. Rinse well and discard any sand and stones. Drain, dry and put aside. Sauté garlic and onions until soft. Put all the ingredients into a large stockpot. Top with chicken stock with at least one inch above all the ingredients. Heat to a boil and reduce to simmer until beans turn very soft and mushy. Stir occasionally to prevent burning the bottom.
